Enjoy the health benefits of the harvest season holidays

Pumpkins go far beyond beautiful decorations for the harvest season holidays.  The health benefits of pumpkins are far reaching!  The bright orange color of a pumpkin is proof of the high amounts of powerful antioxidant beta carotene it contains.  That carotenoid is converted to vitamin A in the body and has proven to provide these health benefits:

  1. Aides in immune system regulation
  2. Contributes to the formation of healthy bones and teeth
  3. Supports the prevention of some types of cancer
  4. Enhances vision by helping eyes adjust to light change

So many look forward to the fall season and the taste of the pumpkin flavors in lots of diverse recipes. Many individuals have expressed interest in cooking their own pumpkins, but fear the amount of effort it takes. Here are some simple steps to cook a pumpkin:

  1. Cut a pie pumpkin in half and scoop out the seeds. 
  2. Place pumpkin halves on a baking sheet, cut side down, and bake in the oven at 350 degrees until pumpkin is soft.  
  3. Remove from the oven and scoop pumpkin from the rind into a bowl.  
  4. Let cool and use in recipes as needed

The other alternative to this process is purchasing canned pumpkin.  Choose low or no sugar options for the best, most healthy benefits.
