Cooking at Home – Colorado Peach Salsa

August is Colorado Proud Month. Celebrate by enjoying a variety of fresh local produce, including peaches. Colorado ranks sixth in the nation for peach production, growing nearly 28 million pounds each year. Choose peaches with firm, fuzzy skins that yield to gentle pressure when ripe. Peaches are sodium free and a good source of vitamin C. Store unripe peaches in a paper bag. Look for Colorado peaches at your local grocery store, farmers’ market or at restaurants across the state.

Lamar Community College Seeks Comments from the Public on Quality

Lamar Community College is seeking comments from the public about the college in preparation for its periodic evaluation by its regional accrediting agency. The college will host a visit on October 15-17, 2018, from a team of peer reviewers representing the Higher Learning Commission. The team will review the institution’s ongoing ability to meet HLC’s Criteria for Accreditation. Lamar Community College has been accredited by HLC since 1976.

Comments must be in writing and must address substantive matters related to the quality of the institution or its academic programs.

Free Entry to Colorado Parks Monday

Colorado Parks and Wildlife will celebrate Colorado Day Monday, August 6 by offering free entrance at all 41 state parks. Colorado Day was created by the state legislature to mark the anniversary of statehood, granted in 1876 by President Ulysses S. Grant. Although the state commemorates its 142nd year on the first of the month, state parks recognize the occasion with free entrance on the first Monday of the month.

Drought Intensifies for Western Colorado, Slight Improvement for Southeast

Despite a series of storms over the previous weekin eastern Colorado, only slight improvements in drought conditions were noted, mainly in Prowers and Baca counties, while drought intensified in western Colorado.

Central and western Prowers County saw extreme drought withdraw to just portions of the northwest and southwest corners, while severe drought retreated to the center of the county.

Gardner, Bennet Backed Amendment to Maintain Southwest Chief Train Services Passes Senate

An amendment cosponsored by Senators Cory Gardner (R-CO) and Michael Bennet (D-CO) to maintain Amtrak train services along the established, long-distance passenger rail route of the Southwest Chief, #3665, was included in the 2018 Transportation, Housing and Urban Development, and Related Agencies appropriations bill.

Governor Appoints Yuma County Court Judge in 13th Judicial District

Colorado Governor John Hickenlooper has appointed Kristei Jones as a Yuma County Court Judge in the 13th Judicial District. He fills a vacancy created by the resignation of the Honorable Sara Marie Wagers-Johnson.  

Jones is a ranch owner and operator, as well as a location manager at the Aurora Cooperative. He has served as a Volunteer Fireman in Wauneta and Wray since 1995. He also served as the Mayor of Wray from 2008-2012, and was a member of the Wray City Council from 2004-2008.
