Recipe - Baked Parmesan Fish

Makes: 4 Servings

This parmesan-crusted fish is topped with mushrooms, green onions, and garlic. It's the perfect heart-healthy meal to cook for a loved one.

Ingredients

1⁄3 cup parmesan cheese, non-fat (grated)

1⁄3 tablespoon flour, all-purpose (1 teaspoon)

1 teaspoon thyme sprigs (leaves removed and crushed)

4 fish fillets (white fish, 6 ounces each)

1 medium onion (chopped)

1 cup halved mushroom caps

1⁄2 cup green onions (finely sliced)

1 cloves garlic (crushed)

Colorado State University Extension will conduct a workshop in Springfield on Thursday, February 23rd to help answer some of your questions and provide you with valuable resources.  The program will take place at the Minnick Building on the Baca County Fairgrounds from 1:00 p.m. to 4:00 p.m.

Gov. Hickenlooper, Commissioner Brown to Appear at Forum on Colorado Agriculture

Joining a myriad of other speakers at the 2017 Governor's Forum on Colorado Agriculture, Governor John Hickenlooper and Colorado Agriculture Commissioner Don Brown will each be stepping up to the podium at the event.

Governor Hickenlooper and Commissioner Brown will help lead a Forum that this year is titled "Label It: Agriculture," focusing on how collaboration and cooperation have made agriculture in Colorado the state's second-largest driver of our economy, and how similar efforts will be critical moving forward.
