Recipe - Beef Stroganoff

Makes:   5 servings 

Mushrooms, nutmeg, and white wine make a delicious yogurt-based sauce for the pasta in this beef recipe.

Ingredients

1 pound beef (lean, top round)
2 teaspoons vegetable oil
3⁄4 tablespoon onion (finely chopped)
1 pound mushroom (sliced)
1⁄4 teaspoon salt
  black pepper
1⁄4 teaspoon nutmeg
1⁄2 teaspoon basil (dried)
1⁄4 cup white wine
1 cup yogurt (plain, low-fat)
6 cups macaroni (cooked in unsalted water)

Death Notice - Dorothy M. Lyon

A celebration of life for longtime Eads resident, Dorothy M. Lyon will be held at 11:00AM on Monday, March 20, 2017 at the Eads Christian Church with Pastor Mark Imel officiating. Interment will follow at the Eads Cemetery.

Visitation for Dorothy will be held prior to the service on Monday at the church from 10:00AM until the time of service at 11:00AM.

Dorothy was born on April 21, 1930 at Sharon Springs, Kansas, to Jeremiah Theodore and Lenola (Johnson) Merica and passed away on March 16, 2017 at the Weisbrod Memorial Nursing Home at the age of 86.

Warm, Dry Weekend Ahead

While the average March is Colorado’s snowiest month, this year feels more like early spring, with temperatures in the 80s this weekend and the potential to break records for this time of year.

Saturday starts off sunny, with a high around 80 in southern Colorado and an overnight low near 40.

Almost everyone outgrows this joke in about a minute, but not the makers of “Kong: Skull Island.” They’ve spent $190 million and years of effort making the King Kong/Vietnam crossover that nobody was demanding, but nobody’s in a hurry to reject either.
