Cooking at Home - Corn Chowder

Using low-fat milk instead of cream lowers the saturated fat content in this hearty dish.

Ingredients

1 Tbsp vegetable oil

2 Tbsp celery, finely diced

2 Tbsp onion, finely diced

2 Tbsp green pepper, finely diced

1 package (10 oz) frozen whole kernel corn

1 cup raw potatoes, peeled, diced, and 1/2-inch

2 Tbsp fresh parsley, chopped

1 cup water

1/4 tsp salt

black pepper to taste

1/4 tsp paprika

2 Tbsp flour

2 cups milk, fat-free or low-fat (1%)

Colorado Farm Fresh Directory Deadline Approaching

Colorado farm producers have just days left to include their information in the 2018 edition of the Colorado Farm Fresh Directory. The directory, which is published by the Colorado Department of Agriculture, promotes farmers’ markets and stands, agritourism activities on farms and ranches, and others ag businesses that sell directly to the public.

The department produces over 100,000 copies of the directory, which is also available as an app for mobile devices and online at www.ColoradoAgriculture.com.

County Line Rivals Blow Away Competition at Crowley County Wrestling Tournament

As the County Line Rivals wrap up their regular season at the Crowley County Tournament this last weekend, they seem to have turned the corner and are ready for Regional action in Sanford this coming Friday and Saturday.  County Line scored a total of 144 points giving them the tournament championship plaque and was 40 points over the 2nd place team, Crowley County Chargers.  They were clicking and came away with 3 tournament champions, 2 – 2nd place, 1 – 3rd place, 2 – 4th place, 1 – 5th place, and 2 – 6th place.&n
