Lunch

January 2 – Barbeque ribs, buttered noodles, peaches, milk, salad and fruit bar

January 3 – Chicken sandwich, French fries, mixed fruit, milk, salad and fruit bar

Cooking at Home - Minestrone Soup

A cholesterol-free classic Italian vegetable soup brimming with fiber-rich beans, peas, and carrots.

Ingredients

¼ cup olive oil

1 clove garlic, minced, or 1/8 tsp garlic powder

1⅓ cups onion, coarsely chopped

1½ cups celery and leaves, coarsely chopped

1 can (6 oz) tomato paste

1 Tbsp fresh parsley, chopped

1 cup sliced carrots, fresh or frozen

4¾ cups cabbage, shredded

1 can (1 lb) tomatoes, cut up

1 cup canned red kidney beans, drained and rinsed

1½ cups frozen peas

Increased DUI Patrols Begin Friday

For many, the new year marks a time for self-improvement, reflection and growth. For those who decide to drive under the influence of alcohol or other drugs, it could mean jail time, steep fines and other penalties. From December 29 to January 2, the Colorado Department of Transportation (CDOT), Colorado State Patrol (CSP) and local law enforcement agencies will increase DUI enforcement to keep our roadways safe from impaired drivers during New Year’s weekend celebrations.

IRS Warns of New Email Scam

The Internal Revenue Service today warned taxpayers and tax professionals of a new email scam targeting Hotmail users that is being used to steal personal and financial information.

The phishing email subject line reads: “Internal Revenue Service Email No. XXXX | We’re processing your request soon | TXXXXXX-XXXXXXXX”. The email leads taxpayers to sign in to a fake Microsoft page and then asks for personal and financial information.
